This is a safe and easy way to can vegetables. We are able to can the green beans in the hot water bath method only because acid in the form of vinegar is being added to the liquid. Green beans are in the low-acid category for canning and require a pressure cooker to safely can them. These dill pickled green beans get canned in a hot water bath for ten minutes. It is an old-fashioned recipe made the way my grandma pickled her beans. I have had this recipe for as long as I can remember. I pulled out my recipe for Hot Dilly Green Bean Pickles in my old recipe box today. We only planted two short rows of Blue Lake Stringless Pole beans, but they have produced such a magnificent crop. Oh, well….life is too short to spend time pulling weeds. Our carrots and beats did not do well, maybe because the weeds were so prolific that they took over the entire plot. In our back yard, we have a small garden area which this year got started a little late in the season. You can always adjust the spice level by adding more or less red peppers according to your taste preference.
